Ghee rice, also known as ‘Neichoru’ in Malayalam, is a cooked rice dish known for its distinctive taste of ghee. With dry fruits, green chillies and onions, this rice dish is perfect on a plate. Ghee rice is a very common dish in Kerala, and is specially prepared for festivals and celebrations. This main dish is often paired with a kurma or curry dish.
How to make Ghee Rice | Ghee Rice Recipe:
Put the pan on the gas, put cashews and raisins in ghee and fry them till they turn golden. Add bay leaves, cinnamon, cardamom, cloves and black pepper. Then, add onions and green chillies, saute till onions turn golden brown. After this add a cup of rice and fry the rice without breaking it. Add water, lemon juice and salt and mix well. Cover the pan and let it cook till the water dries up. Garnish it with ghee rice with fried nuts and the dish is ready to be served!

Pro Tip: You can also make ghee rice in a pressure cooker. All you have to do is cook the rice for two whistles and the rice will be ready.
