This recipe by Neeru Gupta will introduce you to a veg kebab unlike any other. All you need to make these kebabs are bananas, buckwheat flour, ghee (buckwheat flour) and common Indian spices. This recipe is especially healthy because it requires no oil and uses buckwheat, which is gluten-free. To make Kebab-e-Banana, first boil the banana with ginger and cardamom. Mash the banana when it cools down and add coriander powder, chilli powder, rock salt and lemon juice to it. Mix well to make dough. These deep fried kebabs are stuffed with cheese, chillies, figs and pomegranate. It may sound complicated, but this delicious breakfast is very easy to make. You first need to cook the bananas along with the peel for a few minutes. After cooling, peel and mash them. In a hot pan combine the mashed fruit with butter and salt. Add cardamom powder, cinnamon powder, fennel powder and other spices. When cool, add wheat flour and maize flour to the banana mixture. To make the filling, mix paneer, figs, coriander leaves, green chillies, pomegranate seeds, lemon juice and salt. This version of banana kebabs is a simple yet delicious treat. To make Rajma and Banana Kebabs, boil raw bananas and drain off excess water. Finely chop the fruit along with kidney beans. Add garam masala, chaat masala, clove powder, chilli powder, ginger, green chillies and coriander leaves. Mix well and add salt/and spices to taste. Add panko breadcrumbs and make a thick dough. This recipe by Dayashankar Sharma combines 3 types of binding ingredients which will give you a taste of different flavors and textures. You can also customize it when you are observing vrat/upvas/vrat. To make these kebabs, grate boiled bananas and fresh coconut (separately). Heat ghee in a pan and cook grated coconut. In a blender, grind half the roasted coconut. Mash half of the sabudana or sago that you soaked earlier. Add finely chopped green chilies. Mix black pepper, fasting salt, almonds and coconut.
