Sambhariyu Shaak Recipe: How to create this One-Pot Mixed Veg Curry from Gujarat

Sambhariyu Shaak is an easy and hassle-free vegetable that you can make

Vegetables like potato, gourd, egg plan, chilli etc are commonly available in almost every Indian kitchen. You can mix all these ingredients together and make a simple yet delicious one-pot curry to go with your rice or roti. Chop these vegetables, fill them with a spicy and tangy mixture made from crushed coriander, gram flour, ground spices and a little lemon juice. Once all the vegetables are stuffed, put in the pressure cooker and let it cook for 2-3 whistles and that’s it! It is so easy to make this typical Gujarati curry at home. This definitely sounds like the best way to use up all the extra vegetables lying around, doesn’t it? You can also add this curry to your quick weeknight recipes list.

How to make Sambharyu Shake El Sambharyu Shake Recipe:

In a bowl add some gram flour, ground groundnut powder, coconut powder, chilli and ginger paste, some dry spices like red chilli powder, cumin powder with lemon juice and some oil. Add freshly chopped coriander leaves and mix well. Fill the mixture inside the vegetables.

Heat some oil in a pressure cooker, add cardamom and bay leaves, tomato puree and let it cook for some time. Add stuffing if you have some extra left and then go in with the vegetables. Pressure cook it for 2 whistles and serve hot.
