Carrot – 250 grams
Yellow mustard powder – 3 teaspoons
Turmeric powder – 1/2 tsp
Asafoetida – 2 pinches
Mustard oil – 1 tbsp
Salt – as needed
water – 2 liters
How to make carrot kanji
To make delicious and nutritious carrot kanji, first peel the carrots. After that, wash the carrot with clean water and then after drying the water, cut it into one inch pieces. Now pour about half a liter of water into a container and hold it over medium heat to heat it up. When the water begins to boil, put the carrot pieces in it. After boiling the carrots for some time, turn off the gas and cover the container and keep it there for 10 minutes.
After 10 minutes, take the carrots out of the water and put them in a large bowl. Add red chilli powder, yellow mustard powder, turmeric powder, salt to taste and oil and mix well. Now put the remaining water in another container and heat it over medium heat. When the water comes to a boil, turn off the gas and let the water cool.

When the water cools, put it in a glass container. After that, add carrots mixed with spices to it. Now put the asafoetida powder in the container and cover the glass container and keep it in the sun for 3-4 days. During this time, in addition to being tasty in water, it will become acidic. This means the carrot kanji is ready. You can drink it whenever you want. By keeping it in the refrigerator, the kanji will last 15 days and the acidity in it will not increase much.
